Hello Pflugerville!

Our Back-to-School night was so much fun! A big thank you to those parents and kids who braved the questionable weather to join us for this special event. Despite the clouds and light rain, we had lots of fun activities. We'd like to extend a big thank you to: Manda for setting up a terrific solar oven display and demonstration; Katie for sharing her artistic talents; Lt. Bill Edwards of the Pflugerville Police Department for taking a turn in the dunk tank; Willie from Ceramics n' More for providing art activities; Cpl Clowdus of the Pflugerville Police Department's Crime Prevention Unit for sharing information and keeping our community informed; and the Stoney Point High School Junior ROTC students for volunteering to help run the games and activities. You are all very much appreciated!

We are now accepting WIC vouchers for produce. Please pass this on to those in our community who may benefit from this service.

Weekly Drawing

We have a weekly drawing for a basket of produce and market goodies! Fill out a card at the information booth to enter...no purchase necessary! We'll hold the drawing at 6:30 p.m. -- you don't have to be present to win. The winner is notified by phone or email, and can pick up their basket at next week's market between 6 and 7. So come by the information booth and fill out a card -- you'll also receive the community e-newsletter announcing upcoming events in Pflugerville.

This weeks' winner is Jennika C. from Round Rock. She can pick up her basket at the market between 6 and 7 p.m.

 
Farmers

This week, our produce farmers will have: okra, peppers, zucchini and yellow squash, tomatoes, jalapenos, eggplant, and watermelon! Tecolote Farm returns this week to the market!

And for our carnivores.....

6 J Ranch has a wonderful assortment of locally raised beef and pork products. Dewberry Hills Farms has locally raised and processed whole fresh and frozen chicken, as well as thigh and drumstick pieces. Thunderheart Bison has great jerky, and Premium Lamb brings a wide variety of lamb cuts to the market. Whether you want a rack of lamb or just a few chops, they have what you're looking for. Rasco Farm has a nice selection of super-lean longhorn beef.


Prepared Food Vendors

Our prepared food vendors offer a variety of yummy, homemade salads, salsas, and other specialty foods. Want a break from cooking? Pick up a juicy roasted chicken from the Country Grill. Hill Country Homestyle has great pickles, pickled okra, and salsas for every taste. Green Horseshoe Farm makes the best apple butter in the state, and Hill's Kitchen has terrific pastas you can use at home. Come by their booth, they always have samples to try. Dr. Kracker has great flavored flatbreads.

Bakers

The Living Arts Bakery has a sumptuous variety of wonderful rolls, foccacia, and cakes - all gluten free. As a reminder, the Happy Vegan Baker and Lil' Mamas Delicious Desserts are both on vacation. Lil' Mamas returns next week, and the Happy Vegan Baker returns September 16.

Crafters

E-Street Jewelry has great kids bracelets-- a nice back to school gift! Poppies Jewelry brings unique, handmade jewelry, and takes custom orders.

New Vendors

In case you missed them last week, we have two new vendors! Ararat Mideast Fusion brings middle eastern foods to Pflugerville...wraps, hummus, and more. The Pleasant Hill Peddler has tamales, salsas, jellies, turnovers, and pies. Come by and visit our new vendors and welcome them to Pflugerville!

Market Managers Farmers' Market Recipe

Stuffed Eggplant

1 eggplant

3 tabl espoons olive oil

2 garlic cloves, minced

1 medium onion, chopped

1 stalk celery, chopped

2 eggs

4 mushrooms, chopped

2 tablespoons chopped parsley

grated cheese (Parmesan, or similar)

1 cup grated mozzarella

1 cup tomato sauce

Cut eggplant in half lengthwise (do not peel). Hollow out center of eggplant and set aside. Parboil hollowed-out halves for about 8 minutes (no longer).

Meanwhile, chop the eggplant center. In large frying pan combine olive oil, eggplant center, garlic, mushrooms, onion and celery. Sauté until translucent. Transfer to a mixing bowl. Add eggs and parsley. Mix well. Fill eggplant sections halfway with cooked mixture. Sprinkle with grated cheese. Add remaining stuffing and top with remaining grated mozzarella, sauce and more grated cheese.

Place in a baking dish and bake at 350° F. for one hour, or until tender.
